It is a cheese that is supplemented during the pre-fermentation phase with lactic acid bacteria and natural enzymes that function to predigest lactose. A technique that also allows cheese aged less than 30 months to be consumed by lactose intolerant individuals.

The Mantuanella cheese has a well-structured and compact texture with a moderate presence of tyrosine granules.
On the palate, it is particularly creamy with a more pronounced soft perception and a particular sweetness. It is an excellent cheese for appetizers or as part of a full meal, to be paired with delicate peach or apricot jams and acacia honey.
The recommended pairing is usually with wines that are not particularly structured and have bubbles, such as Valdobbiadene Prosecco DOCG.
