I Friarielli in oil BIO Solidale Italiano are prepared exclusively with the fruits of the last harvest, coming from controlled organic farming.
These are blanched in vinegar and immersed in sunflower oil with the only addition of garlic and chili pepper; all this happens under the careful watch of the social cooperative Al di là dei sogni Onlus and the cooperative Un fiore per la vita.
Typical of Campanian cuisine, especially Neapolitan, friarielli are the young inflorescences of cime di rapa. They are very widespread and beloved in central and southern Italy, and depending on the area, they take on various names: broccoletti in Rome, cime di rapa in Puglia, rapini in Tuscany, and mazzareddi in Sicily.
Always part of Neapolitan cuisine, they are often used to garnish pizza, but also to fill sandwiches or as a side dish. In fact, having a quick cooking time, they are very easy to prepare and very versatile.
Being the friarielli winter vegetables, it is during this period that they fully unleash their potential.
Their taste is quite bitter, but it is balanced because in every dish it turns out to be very flavorful.
