The Fusilli di Farro Regiokorn (Regiograno) from Pastificio Felicetti are a true specialty! The spelt used for this pasta is grown exclusively in Trentino Alto Adige: a conscious choice aimed at supporting local farmers, rewarding their brave decision to return to sowing this ancient and gentle grain.

A bronze-drawn pasta that maintains the highest quality that this pasta factory has always pursued. Pastificio Felicetti, renowned for the excellence of its products, always uses only the best raw materials.


THE REGIOKORN PROJECT

Alto Adige has always had a great tradition in the production of grains. Until 1950, every farm cultivated its own fields with grains, and the total cultivated area amounted to 30,000 hectares, but then the gradual shift to a market economy, mainly focused on producing fruits and dairy products, reduced grain cultivation to the point that by 2000 only 243 hectares remained. This is why the Region, also thanks to co-financing from the European Social Fund, wanted to encourage the return of a historic and valuable production. The Regiokorn spelt (in Italian Regiograno) is part of the Spelta variety, one of the oldest cultivated in Italy, very aromatic.

The Fusilli di Farro Regiokorn (Regiograno) from Pastificio Felicetti are also suitable for high mountain catering, where it is known that cooking conditions are more challenging since times are extended: at high altitude, water does not boil at 100°C, but at lower temperatures, requiring longer cooking times. Thanks to the excellent processing and the craftsmanship of this pasta, the Fusilli di Farro Regiokorn hold up perfectly during long cooking. The best way to cook these fusilli is to risotto them, meaning cook them as if they were a risotto: in this way, the starch released by the pasta remains within the seasoning, helping the creaminess.
