The 36-month aged Reserve Cheese by Corrado Benedetti is created thanks to a love for traditions and attention to detail.
The fresh cheese, just twenty days old, is taken from the pastures on the Lessini Mountains. These forms of fresh raw cow's milk, unpasteurized, are then brought to the laboratory. This is where the real adventure begins: the aging.
During this process, Corrado Benedetti, as they say, acts as a caregiver for the cheese, taking care of its shape, brushing it, and oiling it until it ripens, becoming a cheese masterpiece with the aging period engraved as if by fire.
The Reserve Cheese aged 36 months, presented on this page in a format of about 350 grams, has a full and important flavor, ideal to enjoy alone with a glass of wine, as the protagonist of a dish, or to garnish and personalize traditional recipes.
Compared to its less aged counterparts, this cheese has a significant and savory aroma, fragrant and enveloping. It is precisely thanks to the aging process that this cheese can be defined as lactose-free, as the lactose dissolves almost completely through this process.
