The Riso Arborio from Acqua e Sole is truly extraordinary! It is characterized by a large, pearly grain that absorbs a lot of water during cooking, significantly increasing in weight.
A peculiarity of this type of rice is its cooking: the grain cooks evenly on the outside but tends to remain al dente in the core.
The Riso Arborio is an Italian variety of rice selected in 1946 by Domenico Marchetti. This variety of rice gets its name from the municipality of Arborio in the Vercelli area, in the Po Valley, where the variety was selected.

During cooking, the transition from raw to overcooked happens particularly quickly: the advice is therefore to always leave it slightly al dente.
It is particularly suitable for creamy earthy risottos, perhaps a classic mushroom risotto, but also for creamy soups.
