CHICKPEAS: CHARACTERISTICS

The chickpeas are practically fat-free and cholesterol-free, and are naturally rich in plant-based proteins, especially useful in vegetarian and vegan diets; fiber, which helps primarily to lower cholesterol and contributes to the proper functioning of the intestine; minerals, especially calcium, iron, phosphorus, and potassium; vitamins, especially from group B and A; carbohydrates
To enhance the absorption of plant-based iron, chickpeas should be accompanied by foods rich in vitamin C, for example, by adding fresh lemon juice.
