Nduja or 'Nduja - as it should be correctly written - is a spicy spreadable salami typical of Calabria that has its origins in Spilinga, in the province of Vibo Valentia.
What we present to you is defined as the best Nduja in Italy produced by the king of 'Nduja from Spilinga: Luigi Caccamo.

The best 'Nduja is the one from Spilinga

The emigration of the Calabrian people to northern Italy and around the world has made this particular salami known, which was previously unknown and produced only in very few areas of Calabria, including Spilinga itself. Currently, Spilinga is the only municipality that produces it in the most traditional way and has indeed been elected as the City of 'Nduja.

This is why the 'Nduja from Spilinga is considered an artisanal product of excellence. There is no industrial production of this salami, only small family-run businesses. This is why many in Calabria try to imitate the Spilinga product, but they never manage to reproduce the same exquisite taste and incredible aroma.

Nduja di Spilinga Crespone by Luigi Caccamo 450g: How is it produced

The 'Nduja from Spilinga is usually produced in the cold winter months and is made from lard, guanciale, and pancetta: that is, the fatty parts of the pig. Salt is added, but above all a good amount of dried Calabrian hot pepper naturally produced on Monte Poro. This particular pepper is never treated with chemicals because the soil in this area of the Calabrian mountain has an optimal moisture level for its natural growth. 

The 'Nduja is then smoked and aged inside the casing of the same pig, called orba. There are different types of casings: the one we present on this page is called Crespone, small and narrow. The abundant amount of hot pepper used, with its characteristic antiseptic notes, ensures that 'Nduja from Spilinga does not require any type of preservative, making it completely healthy and genuine.

The Nduja di Spilinga Crespone di Luigi Caccamo is a soft spicy spreadable salami perfect for preparing delicious appetizers for a flavorful starter, perhaps on bruschetta or breadsticks, paired with full-bodied red wines, such as a Syrah or a Negroamaro. 

The Nduja di Spilinga can also be used as a seasoning for first courses: perfect with Pasta di Gragnano IGP, perhaps with paccheri which are able to preserve flavors better, or with scialatielli, a thicker pasta than spaghetti, which highlights the combination of durum wheat and the spiciness of 'Nduja. In this case, we also recommend the jar of Nduja that is already prepared.

'Nduja is delicious as an ingredient for savory culinary creations, such as timballo 'Nduja and Caciocavallo Silano, or with baked zucchini flowers.

Also worth trying is the bean soup with 'Nduja, a true monument to Calabrian gastronomy tradition! A humble, ancient dish, but rich in history and flavor.

Just like the eggplant and 'Nduja meatballs, with a mixture to enrich with aromatic herbs and tuna: a true delight for the greedy! Also try it on pizza.
