It is characterized by a semi-hard cooked paste, compact and with a striking white or straw-yellow color, featuring a regular and homogeneous texture.
The rind is smooth, elastic, and compact, with a light brown color.
This cheese is produced only with fresh raw cow's milk sourced from the production area.

The processing follows soft techniques that respect the original microbial flora.
The aging, which can vary from two months to a year and beyond, gives Montasio its extraordinary complexity of flavor.
Montasio takes its name from the homonymous massif, located between the Resia Valley and the Canal del Ferro in the high Friuli region.
Its origins date back to the 1200s, when it was produced by the Benedictine monks of the Abbey of Moggio Udinese.
Over the centuries, production technology spread along the mountain ranges of the Julian and Carnic Alps, eventually reaching the Friulian and Venetian plains.
Since 1996 it has been a Protected Designation of Origin.
