The Pecorino Brillo from Il Forteto is a cheese made from pure sheep's milk aged in wine for at least 4 months in terracotta jars. The paste is white, crumbly, and slightly rough, while the rind, which is inedible, is treated with wine and then covered with a protective film.

After being carefully selected, the cheese wheel is washed, dried, and placed inside a terracotta jar, a typical Tuscan container generally used for holding oil and wine, where it is left immersed in a mixture of Tuscan wines for over 1 month.

This process requires constant care consisting of daily checks and continues until the cheese reaches the right degree of wine absorption that significantly alters its original characteristics.

When the cheese is then taken out of the jar, the paste, without losing any of the typical taste of aged pecorino, has softened, sweetened, and gained the delicate flavor and the unmistakable aroma of wine.
