The Pecorino Brillo from Il Forteto is a cheese made from pure sheep's milk aged in wine for at least 4 months in terracotta jars. The paste is white, crumbly, and slightly rough while the crust, which is not edible, is treated with wine and then covered with a protective film.
After being carefully selected, the wheel of pecorino is washed, dried, and placed inside a terracotta jar, a typical Tuscan container usually used for holding oil and wine, where it is left to soak in a mixture of Tuscan wines for over 1 month.
This treatment requires constant care involving daily checks and continues until the cheese reaches the right degree of wine absorption, which significantly alters its original characteristics.
When the cheese is then removed from the jar, the paste, without losing any of the typical flavor of aged pecorino, has softened, sweetened, and has gained the delicate taste and the unmistakable aroma of wine.
The Pecorino Brillo is also produced exclusively with the best fresh milk from shetland sheep in Tuscany with a Short Supply Chain, ensuring authenticity and quality.
