The Nascondino Extra Affinato in Pere by Corrado Benedetti (proposed on this page in the 1/4 format of approximately 500g) is a hard cheese with a straw yellow color and a spicy, balanced flavor with fruity notes.
This particular aging process follows a very similar approach to its larger-sized version, but the result is completely different. This is thanks to the starting cheese, which in the extra version is of reduced size. This creation aims to enhance local dairy production by broadening the range of flavors. The selected cheese wheels are immersed in a puree obtained from the maceration of pears. The tradition of hiding cheese under fruit has ancient origins and is the source of the name of this product. Once the aging process is completed, the cheese will have developed delicate nuances conferred by the pears, among which a grassy and pungent vein stands out.
