The Colatura di Alici di Cetara (presented on this page in the 250 ml packaging) from the company Nettuno is a traditional agri-food product from Campania, produced in the small fishing village of Cetara on the Amalfi Coast.
The Colatura di Alici is a transparent liquid sauce with an amber color, made by following the ancient marinara tradition of Campania, allowing the anchovies to mature in a saturated solution of water and salt.
It has a strong and deep flavor, which includes notes of smokiness even though it is made from fresh anchovies.
Anchovy sauce is mainly used as a condiment for spaghetti, but also to flavor dishes based on fish or vegetables, such as chicory for stuffed pizza. Additionally, it can be paired with sautéed vegetables in oil, garlic, and chili, such as Swiss chard, spinach, etc. It is also appreciated by some as a condiment for tomatoes, olives, and even for stuffed sandwiches and eggs cooked in various ways.
