The White Fennel that we present to you comes from sun-exposed fields in Puglia. Sa.Ma. Frutta has selected only the Extra ones, meaning those with a very large, particularly round, compact, well-closed bulb that can weigh over 500 grams.
This type of Mediterranean herbaceous plant has a bulb composed of a collection of leaf sheaths, whitish in color, fleshy, closely pressed against one another. The fennel is the vegetable with the lowest caloric index (only 15 Kcal per 100g), helps digestion by combating the formation of intestinal gas, is rich in vitamins A and C, sodium, calcium, phosphorus, and especially potassium which is beneficial for the heart and the nervous system.
The Extra White Fennel from Puglia (which we present on this page in a quantity of 5kg) has a distinctive flavor, similar to that of anise and at the same time slightly sweetish. This makes it very appreciated when consumed raw, in a fresh salad dressed only with a drizzle of extra virgin olive oil and a splash of balsamic vinegar. Steamed, it brings out the best of itself, fully preserving its organoleptic properties. It is also widely used for crudités appetizers or risottos, as well as many other dishes stewed or baked. Its flavor is often used both to enhance the taste of foods and to cover up their flaws.
