The Parmigiano Reggiano DOP Organic 22-24 months from Ferrari BIO is made from skimmed milk from their own production obtained from the evening milking, which is added and mixed with whole milk from the morning milking.
The milk used is organic and has the Hay Milk STG (Traditional Guaranteed Specialty) certification, which guarantees that it comes from cows raised on traditional, sustainable dairy farms, and fed exclusively on grass, legumes, grains, and hay, without the use of fermented feed and the administration of GMO feeds.
Poured into the typical inverted bell-shaped copper cauldrons, the milk is enriched with natural rennet and whey starter, which allows it to coagulate. The curd is then broken down by the master cheesemaker into tiny granules using an ancient tool called a spino.
After this operation, a slow cooking begins, reaching 55°C, after which the curd grains sink to the bottom of the cauldron forming a single mass, which will then be extracted by the cheesemaker and worked to obtain the cheese forms.
The forms thus prepared, after a few days, are immersed in a saturated solution of water and salt that allows them to be salted by osmosis. The final phase of the production process of Parmigiano Reggiano BIO is the aging, where the forms are arranged in long rows and left to rest on wooden boards for a minimum of 22 months.
In this way, the outer part of the cheese dries, forming a natural rind, thus obtained without chemical treatments and totally edible. Finally, the experts from the protection Consortium examine each form of Parmigiano Reggiano and only after a positive check is the fire mark applied to the forms that meet the requirements of the Protected Designation of Origin (DOP).
What you find here is the portion of 1kg aged 22-24 months. With this aging, the Parmigiano Reggiano appears with a straw yellow color. The texture is crumbly and grainy, and the taste presents the right balance between sweet and savory, with an aromatic note of dried fruit and flowers.
