The Pannerone di Lodi from the Caseificio Carena is a true Lodi specialty that was once referred to, only for reasons of similarity, as "white gorgonzola" even though it has no relation to the famous blue cheese.
Pannerone is made with only raw milk and rennet, and generally stands out from other Italian cheeses for not being subjected to any salting treatment and for its high maturation temperatures.
Pannerone is quite a fresh cheese: it has a maturation time of only 10 days. A wheel weighs 12-13 kilograms, is cylindrical, with a diameter of 25-30 centimeters and a height of 20, has a thin, smooth crust that is straw-yellow in color. Its paste is cream-white with dispersed holes, it is soft and highly fragrant. Its flavor, resulting from the activity of the bacterial flora in the absence of salt, is decidedly complex and unique. This has almost led to its disappearance.
The name Pannerone comes from “panèra”, which in the Lodi dialect means cream of milk, cream. This is due to the fact that it is made exclusively from whole milk, which is rich in cream. The first historical mentions of this cheese date back to the time when Napoleon, before the battle of the Lodi bridge, had his troops refresh themselves with this cheese, notoriously high in energy content. Until before World War II, Pannerone was produced throughout the Lombard plain, while today only one dairy remains to produce it.

The Pannerone di Lodi from Caseificio Carena (which we present here in a 1kg portion) is a unique cheese not only in terms of taste but also in the emotions it evokes at the time of tasting. It is the only cheese in Italy to be bitter, as it is not salted during processing. To be more precise, its taste is initially sweet and inviting, but soon it becomes slightly bitter, and it is precisely this sweet-bitter contrast that makes it unique. Therefore, we enter a complicated topic, such as pairing Pannerone.
Generally, it pairs quite well with red wines that highlight the soft and sweet characteristics but can also support the bold and aromatic nuance.
It can be consumed with honey and mustard: in this case, we especially recommend orange honey and candied cherries, or at least a cherry or Vicenza mustard.
Given its softness, it goes well with bread crostini or crispy leavened products, such as Ferrarese bread.
Pannerone is delicious when paired with grape pomace distillates and salted anchovies.
Those who want to embark on daring recipes should know that Pannerone is an excellent ingredient for risottos, which it can give a touch of originality: to be added to creamy risottos like pumpkin or fruit-based ones, like apples or pears.
