The Pancetta Rustica from Salumificio Freoni Danzi is an extraordinary cured meat, low in salt, with an incredibly sweet and characterful taste.
This cured meat is obtained from the belly of the pig and is made by layering two pancette, which are then salted and flavored.
When sliced, the fat is white, and the lean part is pink.
