Speck Wine from the Vigneto dei Salumi is a true gem, perfect for refined palates. Not just a simple speck, but a masterpiece of artisan ingenuity! While working with Vinappeso, it often happened, especially in the early days, that the artisan workshop in Arbizzano di Negrar discarded the wine used in the aging process that enhances the salamis Giulietta or Isabella.
But artisan craftsmanship soon made its presence felt, pushing Walter Ceradini and his collaborators to carry out new and surprising experiments using this particular blend that many others would have certainly discarded.
A blend that is quite different from the wine we are used to drinking, a nectar rich in all the aromas and fragrances of aging, while maintaining the original aromatic and taste profile of the wine.
A blend that contains traces of salt, a characteristic for which it has been nicknamed Vino Cristallino. The Vino Cristallino is the result of a unique processing worldwide, a blend that physically consists of Amarone and Recioto, but spiritually, of knowledge, love, and madness—essentially, all those ways of being that guide and inspire the work of the Vigneto dei Salumi.
An ingredient that takes the other products from the Vigneto dei Salumi line by the hand, creating something truly unique! The Speck Wine from Vigneto dei Salumi presents itself to the nose with an immediate hint of smokiness that then gives way to a harmony of fragrances from freshly picked herbs. On the palate, the flavors and aromas of smokiness, herbs, and meat aging blend with the authentic fragrance of Valpolicella.
The Speck Wine is obtained from the processing of the femoral muscle of the thighs of selected heavy Italian pig aged for 12-13 months in the cellar and then subjected to salting paired with the wines of Valpolicella, Recioto and Amarone, thanks to the delicate yet characterizing presence of Vino Cristallino. Finally, the Speck Wine is flavored with fresh herbs and smoked only after the aging process is complete.
