Filemo from the Vigneto dei Salumi comes from the experience of Walter Ceradini, who decided to create a new line of cold cuts: Frutteto dei Salumi.
Filemo is produced with the loin sourced from selected Italian heavy pigs that is then flavored with the peel and juice of lemon sourced only from selected productions. The piece of meat thus flavored is then allowed to age for 4-5 months in the cellar.
On the nose, one immediately perceives a fresh floral aroma and the palate is soon struck by a savory freshness that ultimately gives way to the aroma of lemon.
We can therefore say that Filemo and Filotto are two cousins, members of a family where taste, craftsmanship, and quality are at home! Filemo is marketed vacuum-packed whole, weighing about 250g.
The experiments conducted with products aged in Amarone and Recioto from Valpolicella have allowed Vigneto dei Salumi to open their minds to new experiences, continuously discovering new aromas and flavors.
Natural ingredients, local and always fresh, are the basis of all the lines produced by the artisanal workshop in Arbizzano di Negrar in Valpolicella.
In the case of the Frutteto dei Salumi line, Walter Ceradini and his collaborators have created new products using, in addition to the best quality Italian pork, the finest citrus fruits from our peninsula, thus showing greater awareness of all the fragrances that nature grants us.
The line of the Frutteto dei Salumi therefore materializes in the sweet encounter between the authentic and artisanal charcuterie of Valpolicella and all the freshness of selected citrus fruits, lemon, bergamot, and orange.
