The smoked buffalo mozzarella DOP from the Caseificio La Fattoria is a cheese that you absolutely must try! It is a stretched curd cheese made from whole buffalo milk that carries with it the entire tradition of Battipaglia and is protected by DOP designation.
Processing done strictly by hand: the cheesemakers, in fact, shape and detach (or rather, "mozzano") the individual pieces from the curd with two fingers, just as the artisanal tradition requires.
