These extraordinary beans have been cultivated for a very long time in the volcanic soils of Alta Tuscia and have deep roots in the history of these towns. Since the end of the 16th century, on the Wednesday of Ashes, the municipality of Gradoli has organized the "Purgatorio Lunch", whose main dish is the bean served with rice in broth and lake fish soups. Why was it called Purgatorio?
