The wine made from sour cherries called Visciola del Lupo, a true flagship of Luca Tenti, is an ancestral product from the Adriatic coast that will bring ancient medieval flavors to your mouth.
The first recipe, in fact, dates back to that era and was created to improve wines that deteriorated with the first summer heat by adding local seasonal fruit. Just as the ancient Romans did, after all.
The wine made from sour cherries was, therefore, born out of necessity, with many methods and recipes secretly kept and passed down by every farming family.
This wine is produced using the same method adopted by the Tenti family for generations, adding freshly picked sour cherries to the red Aleatico wine (the Vernaccia di Pergola). After fermentation, the product is left to rest for a few months and is bottled in the following spring.
The name Visciola del Lupo derives from the area of cultivation and production. In fact, ancient maps of the territory refer to the area as "Madonna del Guardalupo" due to the presence of a small ancient church depicting this name. The existence of this building is surrounded by an old legend featuring a wolf at its center, which inspired Luca Tenti to name his main product.

The Visciola del Lupo is the best dessert wine, as it is pleasant on the palate and provides an important sensation of freshness and dryness in the mouth. Not overly sweet and not too bitter, it pairs excellently with desserts, especially dry pastries and chocolate products.
Its fresh notes, which seek fatty foods, also make it great paired with cheeses, dairy products in general, and even chestnuts. Finally, like the best dessert wines, it can be used as a meditation wine.
This cherry wine is a very fresh and young product, balanced in the mouth with the sweet notes of Aleatico wine that blend and accompany the aromas and acidity of the visciola, which are very pleasant.
