The DOP Sardinia Fruity Extra Virgin Olive Oil Reserve from the producer Bellolio represents one of the peaks of excellence of the Olearia Academy. It is an extra virgin oil made from a selection of olives picked when still completely green, combined with a cold processing method that occurs simultaneously with the harvest.
The Producer's Reserve is a product with a distinct structure, featuring a clear olive aroma, a green fruity taste, fresh and pungent, with strong hints of artichoke and thistle, as well as pronounced pleasant bitter and spicy notes on the palate.
Supply chain guarantee: The harvest, carried out with the aid of mechanical means, is exclusively done directly from the tree, without collecting the olives that have fallen to the ground, when the fruit is at a medium stage of ripening.
