The Appius Alto Adige DOC represents one of the best oenological representations of the St. Michael Eppan Kellerei winery and impresses with its harmony of intense aromas, minerality, lively freshness, and aromatic persistence.

Grapes: Chardonnay 55%, Pinot Grigio 20%, Pinot Bianco 15%, Sauvignon Blanc 10%
Vineyards: selected grape varieties in Appiano with southeast/southwest exposure.
Soil: calcareous-gravelly and morainic
Training method: guyot
Harvest: mid-September to mid-October
Winemaking: alcoholic fermentation and partial malolactic fermentation, aging in barrique / tonneaux. Blending after almost a year and further aging on the lees for three years in stainless steel tanks.

Residual sugar: 3 g/l
Acidity: 5.50 g/l
Alcohol percentage: 14% vol

The Appius from the St. Michael Eppan Kellerei winery is excellent for pairing with fish dishes in all their variations, and it combines perfectly with Asian cuisine as well. It also pairs wonderfully with flavorful dishes featuring white meat and game.

Tasting notes

Color: bright straw yellow with brilliant greenish reflections.
Taste: Intense and rich: primarily tropical fruits: pineapple, mango, kiwi, and banana. In the secondary range: white-fleshed fruits such as apple, pear, melon, apricot, and peach. Slight citrus tones. Subtle toasted and tobacco fragrances.
Flavor: compact and chewable flavor combined with a fresh and lively drinkability. Balanced and round palate with balsamic notes of mint and alpine resins. Long and intense finish.
Serving temperature: 8 - 10° C.
