The Alto Adige DOC Sauvignon The Wine Collection 2016 by St. Michael Eppan Kellerei represents the most famous white grape of the San Michele Appiano winery and Hans Terzer. With limited production, the selected grapes are handpicked and follow a special winemaking method.
Grape varieties: 100% Sauvignon
Vineyard: The grapes come exclusively from selected parcels in the Appiano Monte area. The soils are gravelly with a limestone content.
Training system: Guyot
Harvest: Mid-September
Winemaking: 3 days of cold maceration (Skin contact) and gentle pressing. Fermentation and aging in barrique / tonneau. After the first year, an additional aging on the lees for a total of 18 months in a steel tank.
Aging potential: 25 to 35 years
