The Black Truffle Uncinato, the Tuber uncinatum Chatin, is harvested and consumed from October 1 to December 31 and is considered by many to be a prized variant of the summer black truffle.
It is harvested and cleaned for us by Tartufi Bianconi, who will ship it directly to your home.
On this page, we present it in quantities of 200 grams.
The Black Truffle Uncinato owes its name to the particular formation of its spores which, when observed under a microscope, show small filaments resembling hooks.
The Black Uncinato is very similar to the Scorzone, but has some characteristics that differ from this type:
-the outer part (called peridium) is warty, consisting of less pronounced black warts than those of the Scorzone;
-the flesh (called gleba) is darker than that of the Scorzone, almost chocolate-colored when the truffle is very mature, and it is crossed by very branched white veins;
-its shape is variable, it can be rounded but also flattened;
-its size varies from that of a walnut to that of a tennis ball and is generally smaller than that of the Scorzone.
Being a product that grows spontaneously, it can vary greatly in shape and size, it may have external scratches or other imperfections that, on the other hand, certify its naturalness.
Storage methods: the Black Truffle Uncinato can be stored in the refrigerator for 7 to 15 days between 2° and 6°, wrapped in absorbent paper.

The Black Truffle Uncinato has a delicate aroma and flavor, well-defined and intense, with notes of hazelnut, porcini, and grana. Perfect for multiple uses in the kitchen, both cooked and raw.
It can be used to prepare tasty sauces to dress pasta or risottos, but it is also used to flavor cheeses and cold cuts. Great to put on soft fried eggs or eggs in cocque. Inside omelets with wild vegetables. Ideal for dressing grilled beef steak. For fresh tagliolini and short pasta. To pair with structured white wines and fresh red wines such as Valpolicella Classico or Sangiovese di Maremma.
Availability and prices can vary greatly throughout the season, even weekly.
The individual sizes of the truffles can vary from 15 to 50 grams or more depending on availability.
Orders are shipped directly from the producer from Monday to Thursday.
The fresh truffle will be shipped inside a patented polystyrene packaging specifically created to maintain its freshness, and it will be accompanied by a quality certification from the mycologist Saverio Bianconi.
