The Prefillossera Etna Rosso BIO DOC 2016 from the winery Palmento Costanzo is a red wine that tells the geological history of Mount Etna. It is produced, in organic farming, from vines that are between 120 and 130 years old, which survived the arrival of phylloxera.
Grapes: nerello mascalese 90%, nerello cappuccio 10%
Vineyard: 750 mt. a.s.l., with a soil of black and brown volcanic sands 60-70%; stones and effusive rocks.
Harvest: manual, with selection on the plant, mid-October.
Vinification: fermentation with selected indigenous yeasts and prolonged maceration in rotating French oak barrels of 500 L.
Aging: 24 months in 500 L French oak barrels. 12 months in bottle.
Alcohol percentage: 14% vol.
