Soil: clayey
Training method: unilateral guyot with 13-14 buds
Aging: Metodo Classico
Winemaking: mechanical harvesting during the coolest hours of the day, further cooling of the grapes, soft pressing. Fermentation at low temperatures in stainless steel tanks. Extended cold aging in steel. Addition of must and secondary fermentation in the bottle. Long aging at controlled temperature and humidity.
Alcohol Content: 13% vol.
Residual sugars: < 3 g/l
Total acidity: 8-9 g/l
pH: 3.22
Total SO2: < 50 mg/l

Taste: embracing and flavorful, incisive minerality balanced by a soft creaminess. The fine and persistent perlage enhances the freshness typical of Sorbara.
