The Raspadura from the Bella Lodi dairy is nothing less than Bella Lodi cheese presented in light and delicate flakes, but above all, it is a true Lodi art. The term, typical of the area, refers back to the ancient technique of "raspa", a way of serving cheese by presenting it as extremely thin flakes, scraped with a special long knife. Soft and light, the Raspadura melts in your mouth, enhancing all the characteristics of the cheese.
Being a Bella Lodi, it is a lactose-free cheese. Typical of the Lodi area, it has a white paste, an intense aroma, and a delicious taste that everyone will love. Thanks to its high digestibility, it truly appeals to everyone.
Compared to traditional aged forms, those designated for Raspadura production are younger and undergo a specific processing. Once cut in half, along the edge, the surface of the cheese is "scraped," or gently flaked, by an experienced cheesemaker with a long, flexible blade, specially sharpened.
It seems that the origins of Raspadura can be attributed to the early forms of Lodi grana that were produced but not perfectly aged, which for this reason were "scraped" by the farm owner and the result was kept as a pledge by his farmers.
As is often the case, its origins are humble, but today it is a reassessed product that has become a true protagonist, even to our days, of rich and refined lunches.
Bella Lodi is naturally free of lactose. Thanks to the careful selection of lactic ferments used in its production (a unique selection by the company in collaboration with the Faculty of Agriculture of the Catholic University of Milan), the lactose present is transformed into lactic acid during the fermentation and aging process by the same ferments.
The milk used to create a form of Bella Lodi is collected in a sustainable manner, as it comes only from nearby farms, in the Lodi and Crema areas. Bella Lodi is a cheese of the highest quality also because it is produced with certified milk from a well-defined and restricted area of origin.
Bella Lodi has a certified supply chain, which means that consumers can be assured that all stages of the production cycle are monitored to guarantee compliance with hygiene, safety, and complete traceability requirements, from the raw materials used, through the products and materials, to the finished product.
