The Seasoned Guanciale from Fattoria Valle Magica is a product made with selected cuts of Nero d'Abruzzo pigs and flavored with traditional herbs, creating a texture and taste that are very popular throughout Abruzzo and beyond.

Fattoria Valle Magica aims to give everyone the opportunity to rediscover the flavors of the past through the ethical and sustainable breeding of rare and ancient breeds.
All this is set in the Abruzzo mountains, in the Gran Sasso National Park, under the famous Rocca Calascio. The farm is located at the site of the ancient farm of the Baronia di Carapelle Calvisio monastery, which has been abandoned for many years.

How is the Seasoned Guanciale made? The meat comes from the jowl of the pigs, which has layers of high-quality fatty and lean meat, and has the characteristic triangular shape. First, it is salted for a week, after which pepper is added. After being massaged, spiced, and finally dried, the guanciale is left to mature for at least 60 days. Et voilà.
