For those who don't know, Tastasale is essentially a mixture of ground pork seasoned generally with salt and black pepper. A typical product of Venetian cuisine, in the Venetian dialect its name Tastasal literally means "Tasta", or "taste", and "sal", therefore salt, named so because it originally consisted of a mixture of salami that housewives in the countryside would taste before preparing the actual cured meats.

Why is it also known by this name? Well, you should know that every year, for more than 50 years now, in the province of Verona, in the town of Isola della Scala, the Fiera del Riso takes place, an event where you can taste many types of risotto and rice-based products. The variety of rice used for Risotto al Tastasale is definitely the Vialone Nano, typical of the rice paddies in the area.
To cook an excellent Risotto al Tastasale, you need just a few things, but of excellent quality: a fine, good, and genuine Tastasale, rice, preferably Vialone Nano Veronese, and meat broth, even better if homemade.
There are several recipes to prepare this risotto, each family has its own, but in general, the Tastasale should be sautéed in a pan first to brown it and allow the fat present to melt, thus transforming a dish of rice into a true culinary masterpiece, simple yet truly delicious.
