The Senatore Cappelli symbiotic penne are produced solely with durum wheat grown by Terre Alte Picene using the technique of eco-sustainable symbiotic agriculture.
A variety of ancient wheat obtained by the geneticist and agronomist Nazareno Strampelli in the early 20th century. Characterized by an intense aroma and low gluten content, this wheat was a primary food source until the early 70s, when, due to its low productivity, it was replaced by other more profitable wheats with lower nutritional qualities. Due to its many beneficial properties and the high digestibility of Senatore Cappelli, Terre Alte Picene has never ceased its cultivation.
