The Symbiotic Extra Virgin Olive Oil from Terre Alte Picene comes from the Leccio del Corno species, a variety of plant that is very resistant to low temperatures and has very little fluctuation in yield. The olive groves are cultivated using the technique of Symbiotic agriculture, which produces oil with a high content of Polyphenols and Antioxidants.
The oil from Leccio del Corno is monitored and followed throughout the entire production process. After a few hours from the harvest, it is cold-extracted using a continuous cycle and knife crushing. It is a very robust cultivar, which has been highly valued in recent years not only for its excellent agronomic characteristics but also and especially for the strong characterization of the oil obtained from its olives.

In the kitchen, for its particular aromatic characteristics, it is suitable for use raw on a sliced meat dish, as a dipping with seasonal vegetables (cardoons, radishes, fennel, carrots, and artichokes) and on bruschetta. The olfactory sensations of herbs such as thyme and borage make it valuable for enhancing flavorful and spicy dishes, but also on grilled red meats.
For tasting, it is recommended to use toasted bread or even simply, directly on a spoon of boiled legumes.
The oil presents itself to the eye with a beautiful deep green color, clear and of medium fluidity; on the palate, the flavors and aromas are very pronounced, with marked notes of bitterness and spiciness. In the mouth, one can perceive hints of bitter almond, artichoke, herbal notes such as thyme and borage, strong sensations of unripe olive, with a distinct fruity finish.
