This Monte Veronese DOP d'Allevo / 25-36 months, with semi-cooked cheese, is produced exclusively with partially skimmed raw milk. The long aging and maturation allow the rind to become hard and thick.
The cheese has an absent or scattered eye formation and appears with a straw-yellow color more or less intense.
It is a cheese that lends itself well to creating delicious recipes throughout the year. In winter, we recommend cutting it into flakes on a beautiful plate of polenta or using it to flavor baked vegetables.
Given its long aging, it can be grated and used to enrich risottos or pasta. Great for a summer aperitif accompanied by pear jam and savory crostini.
If you want to pair it with a good glass, the Monte Veronese DOP d'Allevo / 25-36 months goes wonderfully with structured or aged red wines or with dessert wines or fortified wines.
