The processing of Fior di Pepe cheese follows an artisanal production technique similar to that of its older sibling Tomello, but with a much more unique spicy touch and flavor. Made from freshly milked cow's milk, it features a thin but not soft edible rind, which is first massaged with extra virgin olive oil and then coated with very fine black pepper powder. The inner paste, on the other hand, is more crumbly at the center of the wheel, and compared to the rind, it is very soft, uniform, and compact.
Fior di Pepe is an exclusive creation of Fattoria Giambrone. It is made thanks to a skilled artisanal technique and with the highest quality cow’s milk, sourced from the Fattoria's own farms, which are managed with the utmost respect for the well-being of the animals, starting from a highly controlled diet based on local hay.
The Fior di Pepe cheese from Fattoria Giambrone won the bronze medal at the World Cheese Awards 2022.
The Fiori di Pepe has a sweet flavor with a slight acidic note. The pepper gives the crust a spicy and slightly aromatic touch. On the palate, it is very refined and sometimes presents a subtly bitter aftertaste. We recommend it for tasty appetizers paired with robust abbey beers or sparkling wines.
