If a few years ago someone had told Roberto and Vittorio that their Chardonnay metodo classico would be awarded among the 100 best wines in Italy, no one would have believed it. Started as an adventure among friends passionate about good wine, what the team at La Casaia can tell today is that commitment, dedication, and deep passion for their work pay off enormously.

Unanimous acclaim for this intriguing Chardonnay that has rightfully entered the top 100 Vini Top Hundred 2022, which are the 100 best wines in Italy that every year the duo formed by Paolo Massobrio and Marco Gatti selects for Golosaria Milano.

Chardonnay Classic Method “Passion” BIO - La Casaia: How is it produced

The good exposure of the vineyard, the high planting density, agronomic practices respectful of the plants, and a careful and meticulous production methodology are the fundamental characteristics for the production of this high-quality classic method Chardonnay.

The vineyard, planted in 1991, is now cared for by the skilled hands of Vittorio and Roberto, who, supported by their daughters, have chosen to adhere to the strict guidelines of organic farming and tradition.

In the heart of the Oltrepò Pavese, every year the team at La Casaia begins the harvest and manual selection of the most beautiful and healthy bunches when they reach maturity, which are transported on the same day to the company winery where the slow and careful processing begins. After separating the juice from the skins, the must is left to rest in a tank at 12°C for about 28 hours, after which selected yeasts are added to activate alcoholic fermentation. The stay on the lees lasts about 20 days, after which the wine is then cooled to 8°C and left to rest again in the tank.

The basic characteristic of the classic method used to produce Passione is the slow secondary fermentation in the bottle followed by a prolonged maturation in contact with the lees. Calm, patience, and waiting are the fundamental virtues necessary to obtain an intense and engaging wine like Passione. After the first passage in the tank, the Chardonnay rests for 24 months in the bottle, which is periodically shaken to promote the contact of the released substances with the entire liquid.

After the disgorgement and the addition of Liqueur de tirage, a wine syrup whose secret recipe is closely guarded by La Casaia, which compensates for the lost liquid, the wine is bottled again and left to mature for ninety-two days.
