This Pecorino Altissimo Cherri d’Acquaviva from 2021 is produced using a farming system that involves the row with Guyot pruning, with a planting density of 5000 vines/Ha. The grapes are harvested in the first days of October. The grape variety is cultivated on a predominantly clayey soil rich in microelements. Regarding the production technology, it involves a cold prefermentative maceration of 24 hours, with a soft pressing of the grapes. Finally, the alcoholic fermentation occurs at controlled temperature and the maturation takes place in steel tanks for a few months.

On the nose, it releases a strong aromatic intensity typical of the grape variety with hints of ripe fruit, peach, and yellow melon, but also floral notes of broom and acacia.
On the palate, it expresses itself with a beautiful body and great depth balanced by a wonderful freshness.
