This Prosecco DOC Brut Bio produced by La Pria, originates from the Hills of Alonte and Orgiano in the Colli Berici, south of Vicenza.

The grape harvest for Prosecco DOC Brut Bio La Pria takes place in August, using the double guyot training system. As for vinification, the grapes are gently pressed using appropriate pneumatic presses. The aging and resting on the noble lees in stainless steel lasts four months. For sparkling wine production, the Italian Martinotti (Charmat) method has been chosen. The primary fermentation is carried out at very low controlled temperatures with selected yeasts. Finally, regarding the secondary fermentation, the refermentation temperature is set at 16°C. Then, cold tartar stabilization (-4 °C) follows, and finally, microfiltration is conducted before bottling to separate the yeast cells from the sparkling wine.

This Prosecco DOC Brut Bio produced by La Pria is designed for the aperitif but is also an ideal wine for the entire meal thanks to its very fine bubbles and persistent perlage that make it light and fresh.
Ideal temperature: 7°C
Recommended glass: Use a medium-width glass, it is better to avoid the flute which does not allow the aromas to develop.
Organic Prosecco sparkling wine Clear straw yellow with some hints of a yellow-green tone. The bubble size and texture are very fine, and the persistence of the perlage is prolonged and constant over time. There are fruity sensations of Golden apple, floral notes of chamomile, elderflower, and lavender. The sip is fresh and salty, soft with a sweet accent, infused with citrus freshness and savory sensations. It finishes fairly long, evoking the memory of citrus peel.
Wine to pair with seafood dishes, such as shellfish cooked in salted water. Excellent also with savory pies and appetizers. It goes best with soft cheeses with a slight acidity, or with young semi-hard cheeses like Asiago dolce and Monte Veronese made from raw milk.
