This Prosecco DOC Extra Dry Bio produced by La Pria, originates from the Hills of Alonte and Orgiano in the Colli Berici, south of Vicenza.

The grape harvest for Prosecco DOC Extra Dry Bio La Pria takes place in August, in the double guyot form. As for wine-making, it is softly pressed using special pneumatic presses. The aging and resting on the noble lees in steel lasts four months. For sparkling wine production, the Italian Martinotti (Charmat) method has been chosen. The primary fermentation is carried out at very low controlled temperatures with selected yeasts. Finally, regarding the secondary fermentation, the refermentation temperature is set to 16°C. Next, cold tartar stabilization is done at -4 °C, and finally, microfiltration is completed before bottling to separate the yeast cells from the sparkling wine.

This Prosecco DOC Extra Dry Bio produced by La Pria is designed for the aperitif but is also an ideal wine for the whole meal thanks to its very fine bubbles and persistent perlage that make it light and fresh.
Ideal temperature: 7°C
Recommended glass: Use a medium-sized tulip glass, better to avoid the flute as it does not allow the aromas to develop.
Organic Prosecco sparkling wine with a bright pale straw yellow color, featuring fine and numerous bubbles. The aromatic profile is characterized by fruity notes of golden apple, floral hints of chamomile, elderflower, and lavender. The taste is fresh and salty. Pleasant on the palate, soft with a sweet touch, infused with citrus freshness and savory flashes. It rests for at least 4 months on the lees.
Wine to pair with seafood appetizers and cold cuts, such as San Daniele raw ham, or those from the Colli Berici-Euganei, and Vicentina soppressa. Perfect for both sea and freshwater fish, and with any type of white meat. It goes well with soft cheeses with a slight acidity or with short-aged semi-hard cheeses like Asiago and Monte Veronese. Also ideal for desserts.
