The Soave Colli Scaligeri DOC 2020 produced by the Sandro De Bruno agricultural company is made in the Roncà - Montecchia (VR) area on the volcanic hills in the province of Verona at an altitude between 80 and 150 meters above sea level. It is 100% Garganega grapes grown on a perfect soil suitable for cultivation because it is volcanic. The age of the vineyards is about 30 years and their yield per hectare is 110 quintals. Manual harvest during the third week of October. Destemming, cold skin maceration (5°C) in a closed press for at least 12/18 hours, and soft pressing in nitrogen saturation at low temperature. Before fermentation, the must is decanted. Fermentation takes place in steel, and at the end, the noble lees are preserved by performing weekly bâtonnage and kept for 18 months.

Soave Colli Scaligeri DOC Sandro De Bruno: a wine for every meal!
Perfect as a wine to enjoy with any meal, paired with delicious dishes such as a platter with Sopressa di Verona and Prosciutto Crudo di Soave or a savory pie with leeks and pancetta. It also goes well with pasta in a rustic sauce with aromatic herbs or linguine with seared tuna cubes and pistachio pesto. Alternatively, it is best enjoyed alongside a parcel of monkfish with citrus and oven-baked eel with bay leaves.
This Soave Colli Scaligeri DOC from 2020 produced by the agricultural company Sandro De Bruno presents a crystal yellow straw color with golden reflections. The nose shows a decisive minerality, notes of sulphur and flint give way to hints of ripe exotic fruit, apricot jam, orange peel, almond, and flint. A floral bouquet of bitter orange blossom and jasmine, yellow daffodil, and chamomile follows. Next, notes of hay, aromatic herbs, sage, and mint. In the finish, there are hints of powder and beeswax. On the palate, the sip is intense, persistent, and fine. The glyceric structure given by the long aging on the lees adds roundness, perfectly balanced with the fresh citrus notes and pleasant sapidity. Excellent consistency.
Serving Temperature: 8/10 °C
Our chef recommends: Swordfish carpaccio, citrus vinaigrette, and herb croutons
