To obtain an exceptional Amarone della Valpolicella DOCG, the grapes are carefully selected directly in the vineyard and then left in the drying room for natural over-ripening, undergoing a weight loss of between 35% and 40%. This appassimento process lasts about 110 days.
Vinification begins with a gentle pressing in the first half of January, followed by red winemaking with submerged cap. During this process, daily pump-overs are carried out at a controlled temperature of 20-22°C, with a maceration duration of about 25 days. The wine matures through very slow fermentation and a refinement of 36 months.
Bottling takes place in sterile conditions with vacuum sealing, followed by further aging in the bottle for about 6 months.
