The Balsamic Vinegar of Modena IGP Organic from the Silver series of Acetaia Guerzoni represents an excellence that combines tradition with organic and biodynamic quality. Made through a meticulous combination of cooked must and wine vinegar, obtained mainly from red grapes such as Lambrusco and Sangiovese, this vinegar is aged in 220-liter wooden barrels.
It offers a round and full flavor characterized by high density and an intense aroma; it is a natural and authentic product, free from colorants, preservatives, or other artificial substances.

Balsamic Vinegar of Modena PGI Organic Silver Demeter 250ml - Acetaia Guerzoni: How is it produced

The Balsamic Vinegar of Modena IGP Argento is created using a blend of cooked must and wine vinegar, primarily from Lambrusco and Sangiovese grapes. It starts with the hand-harvesting of grapes grown according to the principles of organic and biodynamic agriculture. The must is slowly cooked until it reaches a thick consistency while a portion of the fresh must is used to produce wine, which then undergoes acetic fermentation.

The cooked must and the wine vinegar are mixed and left to rest in wooden barrels (barriques) of 220 liters for several months, allowing the product to develop its unique flavor. The vinegar is finally bottled, ready to be enjoyed.
