Traditional Balsamic Vinegar of Modena PDO Organic Demeter 100ml - Acetaia Guerzoni

The Acetaia Guerzoni has always used only organic and biodynamic grapes from its origins, making its balsamic vinegar unique in its kind. This vinegar is produced from the aging of only cooked must that has been acetified, contained in barrels that are all different from each other in type of wood and size. In the company, each barrel is associated with a planet of the solar system according to a biodynamic derivation scheme: Moon (cherry), Venus (acacia), Mercury (mulberry), Sun (ash), Mars (oak or beech), Jupiter (maple or chestnut), Saturn (juniper or chestnut). This particular maturation process, which can last up to 24 years, gives the vinegar unmistakable properties and aromas.

Before being bottled, the vinegar undergoes rigorous inspections by the Tasting Committee at the Chamber of Commerce of Modena, which evaluate density, acidity, and organoleptic characteristics. Only after passing these checks can the vinegar bear the name of Traditional Balsamic Vinegar of Modena. In addition, to further guarantee the consumer, the Consortium of Producers takes care of bottling the batch within the same Chamber of Commerce.

The Traditional Balsamic Vinegar of Modena DOP is the result of a long and meticulous artisanal process.

It begins with the harvest of the grapes, primarily Lambrusco and Trebbiano, which are cultivated according to organic and biodynamic principles. The grape must is then slowly cooked for several hours until it becomes a thick liquid, and then it is transferred into small wooden barrels where it ferments and ages for at least 12 years. The barrels, made of woods such as oak, chestnut, cherry, ash, and mulberry, give the balsamic unique flavor nuances.

Each year, the vinegar is transferred to smaller barrels, allowing for a more intense interaction with the wood and a greater concentration of flavors.

Before bottling, the vinegar undergoes rigorous checks by the Tasting Commission at the Chamber of Commerce of Modena, which evaluate its density, acidity, and organoleptic characteristics. Once these tests are passed, the vinegar receives the prestigious name of Traditional Balsamic Vinegar of Modena. The Producers' Consortium further ensures consumer protection by bottling the product within the same Chamber of Commerce.
