The Bottarga has a granular texture and an intense aroma, so much so that it is used in the kitchen to season from classic bruschetta on bread to more elaborate dishes.
A good pairing, in fact, to best enhance its flavor, can be to lightly toast a slice of bread, cover it with slices of tomato, a drizzle of oil, and lay slices of bottarga on top.
It is also used to prepare the classic pasta with Bottarga: in this case, you need to heat some EVO oil in a pan and add the pasta, particularly al dente, so that it is risottato with the cooking water. Then, add the thinly sliced bottarga prepared beforehand, dispelling the false myth of grated bottarga on top of the pasta.
For better use, it is recommended to remove the outer natural casing containing the egg before slicing the Bottarga. In the preparation of this first course, if desired, a pinch of lemon zest can be grated at the end of cooking.
