The Plaisentif, also known as "cheese of the violets", is an alpine toma particularly appreciated for its unique fragrance. This cheese is produced exclusively in June, when the pastures of Val Chisone, rich in purple flowers, give the milk a special aroma.
The Plaisentif is not just a cheese, but a symbol of an ancient dairy tradition well rooted in the culture of Val Chisone. Each wheel represents the perfect union between nature and the work of man, making it a unique and sought-after product.
The production of Plaisentif follows an ancient tradition, which involves a selection of alpine pastures located in the high Val Chisone, with some encroachment into the nearby Susa Valley.
The path that connects these pastures is known as the "Plaisentif Path", and it spans across seven dairies.
The milk used for the production of Plaisentif must be raw, whole and come from cows that are exclusively fed with alp pasture forage. The production period is limited to a maximum of 30 days, starting from the beginning of the flowering of violets in the alpine pastures. This narrow time window ensures that Plaisentif retains its authentic flavor and its organoleptic properties linked to the seasonality of the flowers.

The Plaisentif is distinguished by a complex aromatic bouquet, dominated by the scents of butter, wet chestnut leaves, and hints of undergrowth and clean stable. The aromas that develop in the mouth during tasting evoke butter, chestnuts, and walnuts, with a finish that leaves a creamy and slightly almond-like sensation. The aromatic persistence is of medium intensity, and the hints of clean stable gently accompany the taste.
The texture of Plaisentif appears compact, deformable to the touch, and in the mouth, it reveals itself to be soft and moldable. During chewing, the consistency becomes slightly grainy and easily dissolvable, resulting in a pleasant and easily swallowable experience. The cheese never presents bitter notes, maintaining a savory and delicate balance.
Externally, the Plaisentif has a gray-ochre rind, while the paste has a golden yellow hue, with a distribution of small holes scattered evenly. These visual characteristics, combined with its typical shape marked with the letter "P" and a stylized violet, make the Plaisentif easily recognizable.
