The Plaisentif 500g, also known as the "cheese of the violets", is a high mountain product appreciated for its unmistakable aroma. It is made exclusively during the month of June, when the pastures of the Val Chisone, enriched by purple flowers, give the milk a unique scent.
The Plaisentif 500g is not only a high-quality cheese but represents a symbol of the ancient dairy tradition of the Val Chisone. Each wheel reflects the harmony between nature and the skill of the cheesemakers, making Plaisentif a prized and particularly sought-after product.
Its processing is based on a centuries-old tradition that involves several alpine pastures located in the upper Val Chisone and, to a lesser extent, in the nearby Valle di Susa. The cheese is linked to the Sentiero del Plaisentif, which crosses seven alpine huts.
For the production of Plaisentif, only raw and whole milk from cows fed with alp pasture forage is used. The time window for production is limited to just 30 days, during the blooming of violets in the alpine pastures. This strict control over timing allows the cheese to maintain its unique flavor, closely tied to the seasonality and local flora.
