The Smoked and Aged Pork Bresaola with Red Bilberries from Mendelspeck is an excellent product that combines tradition and culinary innovation. Made from pork leg, a cut that can be compared to beef bresaola, this specialty is salt-cured, naturally smoked, and then aged with red bilberries to give it a sweet and sour flavor, with a delicate smoky note.
The production process follows artisanal methods: the first phase takes place in our facility in Termeno, on the Wine Road, where the raw material is selected and classified based on weight and quality. Each piece is hand-massaged to ensure an optimal distribution of the natural spices used to flavor the product. After a light smoking, the bresaola is transferred to the Passo di San Lugano, at an altitude of about 1000 meters, where it is aged in perfect climatic conditions.
