Wrapped - artisan Tuscan pasta 500g: How is it produced

The secret of the Avvolti lies in their processing: bronze drawing, a traditional technique that gives the pasta a porous and rough texture, perfect for capturing and holding every type of seasoning, enhancing the flavors with a sublime grip.

After drawing, the Avvolti undergo a slow drying process, which lasts for three whole days in wooden cells. This method, respectful of natural times, allows the pasta to mature slowly, preserving all the properties of the wheat and giving the final product superior quality.

It is a process that recalls the ancient practices of master pasta makers, when time was considered a precious ally in creating a product that stood out for its authenticity and goodness.

Traditional cooking technique: 7 min (al dente), 1 lt of water for 100g of pasta + 10g of salt

Passive cooking: in boiling water 2 minutes + 5 minutes off the heat, 1 lt of water for 100g of pasta + 10g of salt

Risottatura: in boiling water 4 minutes + 5 minutes in the sauce, 1 lt of water for 100g of pasta + 10g of salt

One pot pasta (2 servings): 13 minutes directly in the sauce, 500 ml of water for 160g of pasta + 180g of Wild Boar Ragù + 10g of Olive Oil + 5g of salt
