The Fusilli Corte del Dome are produced directly by ancient Tuscan pasta artisans guided by the mantra of "how it was made once upon a time" in workshops where the pasta made in the morning is left to dry for three days in wooden cells, to maintain all the beneficial qualities of the fine grains from the area.
Each Fusillo is made using the ancient method of bronze drawing, which gives the surface of the pasta an ideal roughness to hold sauces.
The water used comes from a spring that flows directly through the winding inlets of the Pistoia mountain, where the winter snow from Abetone melts to follow its long course down to the valley.
