Among the most well-known Italian cheeses, the Bagoss Presidio Slow Food is unique because of its almost luminous yellow color, which comes from the use of saffron in the paste, as taught by an ancient tradition of the Brescian mountains.

Produced in Bagolino, the town from which it derives its name (the Bagossi are the inhabitants of Bagolino), it is produced only with milk from mountain pastures. With a semi-cooked texture, it is usually aged for at least 24 months.
It has a typical aroma and a very compact paste.

Characteristics

The shape of Bagoss is cylindrical (diameter 40-55 cm, height 10-12 cm, weight 16-20 kg), with hard consistency. The rind is oily, the paste is consistent, sometimes with small holes, and at maturity it tends to break into flakes.

It is the right cheese to enjoy with coarse, hot polenta just taken from the pot. The pairing of the Bagoss DOP ranges from classic sparkling wines like a Franciacorta, to medium-bodied red wines.
If the aging is high, we can also pair it with Amarone or Barolo.

Tasting

The smell is characteristic of aged cheese, penetrating and persistent. You can sense the spicy notes of saffron combined with hints of pasture and hay. It has an intense, typical flavor, slightly spicy.

L’odore è caratteristico di formaggio stagionato, penetrante e persistente. Si avvertono le sensazioni speziate dello zafferano unite a note di pascolo e fienagione. Sapore tipico intenso, lievemente piccante.

Noi lo consegniamo porzionato sottovuoto, imballato in confezioni termiche così da farvelo gustare appieno. Non vi è ancora venuta l'acquolina in bocca?
