The Blu 61 cheese is an exceptional blue cheese made from cow's milk, multi-awarded and produced through aging in Raboso passito wine and red blueberries.

The texture of the cheese is creamy, with a widespread presence of blue marbling due to the molding.
It is certainly a work of art for its elegance and harmony: an intense, decisive flavor, balanced by the typically sweet, wine-like aroma of Raboso passito.

So many awards won!

It would be almost impossible to list them all, but let us tell you about one of the first awards won by Blu 61: the Gold Medal in the "blue cheese" category at the Alma di Caseus 2012 competition, organized by the International School of Italian Cuisine led by Gualtiero Marchesi. Then, in 2013, it was awarded by Slow Food and Onaf at the international event "Cheese" in Bra with a diploma of excellence at the "Infiniti Blu" competition held in Gorgonzola.

From then on, Blu 61 has always stood out, accumulating recognitions that also indicate how the quality of the product has remained unchanged.

The half form of Blu 61 weighs about 1.5kg (which will arrive home vacuum packed, cut horizontally). In the kitchen, it is excellent to enjoy at the end of a meal for its uniqueness, and perhaps share at a dinner with friends or family.

The ideal pairing is with dessert wines from white grapes, among which Recioto di Soave DOCG. A special idea to use Blu 61 in a recipe? Certainly the risotto with Asparagus and Blu 61.

Tasting

Perfectly balanced in flavor and structure, rather sweet although blue-veined. The winey notes due to the presence of pomace, never invasive, blend wonderfully with the milk hints and with the blue veining.

Perfettamente equilibrato nel sapore e nella struttura, piuttosto dolce sebbene erborinato. Le note vinose dovute alla presenza delle vinacce, mai invasive, si sposano mirabilmente con i sentori di latte e con l’erborinatura.
